cheddar + dill scones

Hey guys! I apologize it’s been a bit quiet around here. But don’t fret, I have a delicious post to share with you today:) Being a designer, I’m constantly behind the computer and I’m making a huge effort to do less of that. I’ve had an itch to start creating more with my hands so I’m going to run with it..!! My notebook is filled with so many fun + tasty projects to experiment with!! Expect to see more of that around here in the upcoming weeks:)

Upon returning to Canada, I’ve been madly craving scones – it only made sense to put my hands to work + make some! As if I didn’t get my fix eating my weight in scones while in the UK.. 😉  Kendra kindly offered to help style + shoot on Saturday afternoon, that girl sure is a good one!

Now back to making this yummy treat – it takes about 40 minutes (includes baking time!!) and makes the perfect snack to enjoy with a cup of tea! YUM!

Cheese + Dill Scones (loosely adapted from Bon Appétit)

You’ll need:

4 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons salt
1 cup (2 sticks) chilled unsalted butter, cut into pieces
4 large eggs
1 cup cold heavy cream
1/2 pound, extra-sharp cheddar, small-diced
1 cup fresh minced dill

Directions:

Preheat oven to 400°. Combine baking powder, salt, and 4 cups flour in a bowl; add butter and mix until butter is in pea-sized pieces. Mix the eggs, heavy cream, and then add to the dry ingredients. Toss in the dill + diced-cheddar and knead for 1 minute until dill + cheddar are well-distributed – be careful not to overwork dough.

Turn out dough onto a lightly floured surface and roll into a ball. Scones can be made into any shape you desire, I kept it easy and made into a circle.

Bake on a baking sheet, lined with parchment paper for 20–25 minutes. Yields: 12-14 scones

Chow down with your cutest friends 😉 ps: i added a dollop of honey to a few – savoury + sweet…mm!
